Cilantro Pesto Noodles


½ pound noodles (try fettuccini or angel hair)
1 cup fresh cilantro leaves
¼ cup cashews
1 lime, juiced
1 (1-inch) piece peeled fresh ginger, sliced
½ jalapeno, seeded, chopped
1 teaspoon sugar
½ teaspoon salt
¼ cup vegetable or olive oil


1) Bring a large pot of water to a boil. Add noodles and cook until al dente, about 10 minutes. Drain and set aside.

2) Combine remaining ingredients in a food processor; puree until smooth. Add to reserved noodles; toss well and serve.
